Campfire Bannock (and Scummy Tea)

If only Jeremy and Justin would have had a bannock mix with them that long, cold night they were lost on the lake…

It’s hard to imagine a community supper up here in northern Saskatchewan without bannock. There are uncountable variations of the recipe and how to prepare it – baked, fried, sweet, salty. My favourite way to cook bannock is over a campfire.

Ingredients:
3 cups of flour
4 teaspoons baking powder
2 tablespoons lard
1 cup of water
A dash of salt

Black tea bags

Willow Sticks
Pocket Knife
Campfire kettle
Cups

At home mix flour, baking powder, lard, and salt in a Ziploc bag. Pack water, tea, and your kettle and head out to a beautiful spot in the bush. Build a fire. Cut a willow stick no thicker than your thumb and peel the bark off. When you have some hot coals, add your water to the bannock mix and knead well. Wrap the dough in a spiral around your willow stick and patiently hold your stick over the coals until the bannock is golden brown. While you are waiting bring the kettle to boil and add your teabags. Leave to steep and add more water and teabags as needed.
